The strudel is a type of layered pastry filled with any number of different fruit or vegetable fillings. This diversity was causing problems for a well-known manufacturer in Austria: the traditional home of the dish.
Their production process involved dosing apples, damsons, vegetables and so on onto the wafer-thin strudel dough from above, using traditional dosing cylinders. However, this not only meant difficulties in filling the hoppers at a high level, but also in achieving the required minimum size for the fruit or vegetable pieces. They asked seepex to find a solution.
The answer was a pump from the seepex BCTI range, with a hopper, integrated bridge breaker (to prevent the bridges that form above the auger feed screw when pumping highly viscous or airtight products), and specially manufactured counter-running rotating paddle shafts.
As the paddles can be adjusted through 360°, they can apply more or less pressure to fill the conveying screw, according to the size of fruit or vegetable pieces required. The even wall thickness of the stator ensures a consistent sealing line, constant temperature patterns and increased dosing accuracy, whilst the pump can be thoroughly cleaned without dismantling, using CIP flow cleaning for optimum hygiene. The compression housing is dismountable for service work when required. The pump offers conveying capacities from 100l/h– 130m3/h (0.44–572 USGPM), and pressures up to 36 bar (540 psi).
The manufacturer is now able to load fillings more safely and easily, directly into the pump which is situated on the ground, and to adjust the paddles to achieve the filling particle size required. Dosing accuracy is also over 96%, ensuring less waste production, shorter production times, and more consistent strudels.
